The Purgatory Bean is a local variety , typical of Alta Tuscia, sown since time immemorial in the municipalities of Gradoli, Acquapendente and Onano. This is evidenced by the lunch organized since 1600 in Gradoli , on Ash Wednesday, called " Purgatory Lunch ", during which money was collected to support the poor of the town. This bean, boiled and seasoned with salt, pepper and extra virgin olive oil, is the dish typical traditional more appreciated than the lunch that still takes place today in the streets of the town of Gradoli.

Presents a thin skin and easily digestible, as well as a consistency thick and creamy. It's a legume rich in proteins, starch, fibres and mineral salts.


Packaging

Our legumes are offered in standard formats from 300g , packaged using protective atmosphere to ensure a better shelf life of the product. Intermediate formats are also available upon request. All our products are tested before packaging hand-selected : this ancient gesture requires a lot of time, but ensures the absence of impurities in the final product.

Use in the kitchen

To savour the quality of the bean, it is advisable to taste it with the addition of only salt and Extra Virgin Olive Oil. Excellent when paired with fish-based dishes , alternatively it is ideal for making soups hot, side dishes , tasty Salads And gourmet dishes.

Yes recommends to cook the legumes in cold unsalted water only after rinsing them. With its thin skin, this bean does not require soaking.
